Once Kevin caught the kombucha bug, he was hooked, and was buying a bottle of kombucha a day. Looking for a way to save money, Courtney reached out to friends to find a SCOBY so she could brew her own and hopefully have fun while doing it.
Once the little weird-looking culture arrived, it took her a few weeks to actually jump in and start her first batch. They brewed one gallon a week, and soon realized it wasn't enough to fulfill the desire of both of them, so they added another gallon. Then it got crazy. After brewing a whopping 8 gallons a week, and not being able to drink it all before the refrigerator was jam-packed, they started passing it out to friends and co-workers. One of those people was about to open a brewery and asked if they could brew kombucha for him at the brewery so he could have an alternative on top that wasn't soda. They excitedly obliged, and KC Kombucha was born. Their small batch containers always toted the name KC Kombucha at home, but now it was a real, living company, doing big things in big kettles. Today, KC Kombucha is no longer working out of the brewery, but are focusing on scaling up, experimenting with fun flavors, and introducing their kombucha to Sacramento through farmer's markets, events, and pop-ups.
